Beef stroganoff

Here's a recipe for Beef Stroganoff:

Ingredients:

For the Beef:

  • 500g (1 lb) beef sirloin or tenderloin, thinly sliced into strips
  • 1 tbsp olive oil or butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 250g (8 oz) mushrooms, sliced (button or cremini mushrooms work well)
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 cup sour cream
  • Salt and pepper to taste
  • 1 tbsp flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

For Serving:

  • Egg noodles, rice, or mashed potatoes
  • Additional sour cream (optional)

Instructions:

1. Prepare the Beef:

  • Season the beef strips with salt and pepper.
  • Heat the olive oil or butter in a large skillet over medium-high heat.
  • Add the beef strips in batches, cooking for 2-3 minutes until browned on all sides. Remove the beef from the pan and set aside.

2. Sauté the Vegetables:

  • In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened.
  • Add the minced garlic and cook for another 1 minute.
  • Add the sliced mushrooms to the skillet and cook until they release their juices and begin to brown, about 5-7 minutes.

3. Make the Sauce:

  • Sprinkle the flour over the mushroom mixture if you want a thicker sauce, and cook for 1-2 minutes to remove the raw flour taste.
  • Pour in the beef broth and Worcestershire sauce, stirring to combine. Bring the mixture to a simmer.
  • Stir in the Dijon mustard, if using, and let the sauce cook for a few minutes until it thickens slightly.

4. Finish the Stroganoff:

  • Reduce the heat to low and stir in the sour cream. Make sure the sauce is well mixed, but do not let it boil, as the sour cream can curdle.
  • Return the beef strips to the skillet, along with any juices from the meat. Stir to combine and cook for a few more minutes until the beef is heated through.
  • Taste and adjust the seasoning with salt and pepper as needed.

5. Serve:

  • Serve the Beef Stroganoff hot over egg noodles, rice, or mashed potatoes.
  • Garnish with chopped fresh parsley and a dollop of sour cream if desired.
